Why You'll Love This Gluten Free Strawberry Crisp Recipe

Whether you're avoiding oats due to celiac disease, gluten sensitivity, or just personal preference, this recipe proves you don't need oats to make a truly amazing crisp. It's simple, cozy, and made with easy pantry ingredients, which makes it perfect for spring and summer desserts, holidays, or those nights when you just want something sweet without a lot of effort.

Berry Delicious Details Ahead!

There are a lot of gluten free desserts out there, but this one is a keeper!

  • Made with fresh strawberries
  • Easy to customize with what you have on hand
  • Perfect for celiac-safe entertaining
  • Delicious warm or cold (especially with ice cream)

Traditional fruit crisps rely heavily on oats for texture, but this version uses a buttery gluten free crumble that bakes up crisp on top while staying tender underneath.

Best Strawberries to Use for a Crisp

Fresh strawberries work best for this recipe, especially when they're in season. Look for berries that are bright red, firm, and fragrant. If your strawberries are extra juicy, don't skip the cornstarch. It helps thicken the filling so you get that perfect spoonable texture instead of strawberry soup.

Frozen strawberries can work in a pinch, but be sure to thaw and drain them first, or the filling may end up too watery.

Equipment & Ingredients You'll Need to Make this Gluten Free Strawberry Crisp

  • 8 x 8 baking pan
  • A large bowl for mixing

For the strawberry filling, you'll need:

  • Fresh strawberries, hulled and sliced
  • Cornstarch to thicken the filling
  • Fresh Lemon Juice
  • Brown Sugar or coconut sugar

For the gluten free crumble topping recipe, you will need:

  • Gluten Free 1:1 flour
  • Almond Flour
  • Brown Sugar
  • Cinnamon
  • Salted Butter, or dairy free butter if needed.

How to Make Gluten Free Strawberry Crisp Without Oats

In your 8 x 8 pan, start by tossing your sliced strawberries with your lemon juice, brown sugar, and cornstarch.

Once this step is done, you're ready to prepare your cumble topping. Start by adding all of your dry ingredients into a large bowl and mix well. Then, take your sliced butter and add it to the mixture. Use the back of a fork to press the butter into the ingredients until a crumble forms!

Once your crumble topping is done, srinkle it evenly over your pan of strawberries. Then, pop it in the oven and bake for about 35 minutes at 350 degrees. You will know when it's baked and ready to go when the crumble is golden and the strawberry filling is bubbling.

Serving Ideas

This gluten free strawberry crisp is delicious on its own, but let's be real, it's even better with toppings!

  • Vanilla ice cream
  • Whipped cream
  • Dairy-free coconut whipped topping
  • A drizzle of honey or strawberry sauce

Serve it warm for the ultimate cozy dessert, or chilled straight from the fridge the next day (yes, it's still amazing).

Make It Ahead & Storage Tips

This dessert is perfect for prepping ahead of time.

  • Make ahead: Assemble the crisp, cover, and refrigerate for up to 24 hours before baking.
  • Store leftovers: Keep covered in the fridge for up to 3-4 days.
  • Reheat: Warm in the oven or microwave until heated through.

The crumble topping stays surprisingly crisp, even after refrigeration.

Variations to Try

Once you've made this strawberry crisp once, it's easy to switch things up:

  • Add blueberries or raspberries
  • Use coconut sugar for a deeper flavor
  • Swap strawberries for peaches or apples
  • Make it dairy-free with plant-based butter

This base recipe works beautifully with other fruits, making it a staple gluten free dessert year-round.

I hope you enjoy making and eating this easy summer dessert recipe! It is a favorite of mine and fits for 6 servings to make the whole family happy.
