Gluten-Free Swedish Meatballs with Homemade Gravy
Have you ever had the famous IKEA Swedish Meatballs before your gluten free life? These taste just like the ones you get at the store, only a much healthier, better than IKEA version! They are completely gluten-free, dairy-free and paleo and whole30 friendly. With a few simple substitutions, you can customize this dish to fit any dietary needs or preferences.
What Ingredients Do I Need to Make These Gluten-Free Swedish Meatballs and Gravy?
This is an easy meal that you can make in just about 30 minutes with many ingredients you most likely already have in your pantry and freezer!
Here's what you'll need:
- Ground Beef. I left out the pork in this recipe and used all ground beef. You can switch it up and use a combo of 1lb of each if you like.
- Eggs. Helps bind the meatballs.
- Almond Flour. Also used as a binder.
- Nutmeg & Allspice. These warming spices makes the flavor unique & delicious.
- Beef Broth. The base for the sauce.
- Tapioca Flour. For thickening.
- Salt and Pepper. To taste.
- Butter. Creates a depth of flavor for the sauce. Use vegan butter for dairy-free or ghee for paleo/whole30.
- Oil. To brown the meatballs.
- Kite Hill Unsweetened Greek Yogurt. This is an amazing sour cream replacement for dairy-free eaters and creates the creamy gravy sauce.
- Fresh Parsley. Optional for garnish, but it helps brighten up the meal!
This meal comes together pretty quickly, so you can have dinner on the table easily during busy weeknights.
Prep Ahead!
You can even make and shape the meatballs ahead of time and store them in an airtight container in the fridge overnight. They'll be ready to go when you're ready to cook!
How to Make Swedish Meatballs
- Add the ground beef, eggs, almond flour and spices to a large mixing bowl. Combine well and shape into small balls.
- Heat a large skillet with oil over medium heat and cook the meatballs in batches until browned on all sides and just about cooked through.
- Remove from the skillet and transfer to a plate covered with foil.
How to Make the Homemade Gravy Sauce
- In the same skillet, over low heat, melt the butter.
- Dissolve the tapioca flour in the beef broth, then add to the skillet with butter. Season with salt and pepper. Add the meatballs back into the pan with the sauce until cooked completely through.
- Bring the sauce to a simmer and cook until it thickens, stirring occasionally.
- Once sauce is thickened, lower the heat and stir in the yogurt until well blended.
For serving, I love to use gluten-free tagliatelle egg noodles. However, you can serve these meatballs over any gluten-free pasta you love, or rice is delicious too...cauliflower rice or mashed potatoes are great options for Whole30/Paleo.
