Burrito Bowl with Creamy Avocado Dressing

Ingredients
In the Bowl- Rice or Quinoa, cooked according to package directions
- Ground beef, turkey or chicken, seasoned with homemade taco seasoning
- Peppers & tomatoes diced
- Black beans, rinsed and drained
Creamy Avocado Dressing
- 1 large ripe avocado
- 1/4 cup grapeseed oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 2 cloves garlic
- 1 handful fresh cilantro
- juice from 1 lime
- 1/2 cup water, add more for thinner consistancy
- 1 jalapeno, stems and seeds removed, optional
Directions
- Add all dressing ingredients to a food processor and blend until creamy. If you would like a thinner consistency, add more water 1 tablespoon at a time.
- Layer cooked rice or quinoa on the bottom of your bowl and top with meat, veggies and dressing.
