Burrito Bowl with Creamy Avocado Dressing

Ingredients

In the Bowl

  • Quinoa, cooked according to package directions
  • Ground beef, turkey or chicken, seasoned with homemade taco seasoning
  • Peppers & tomatoes diced
  • Black beans, rinsed and drained

Creamy Avocado Dressing

  • 1 large ripe avocado
  • 1/4 cup grapeseed oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 2 cloves garlic
  • 1 handful fresh cilantro
  • juice from 1 lime
  • 1/2 cup water, add more for thinner consistancy
  • 1 jalapeno, stems and seeds removed, optional

Directions

  1. Add all dressing ingredients to a food processor and blend until creamy. If you would like a thinner consistancy, add more water 1 tablespoon at a time.
  2. Layer cooked quinoa on the bottom of your bowl and top with meat, veggies and dressing.
