Homemade Burrito Bowls

The best thing about a dish like this is that there is something for everyone. My picky kids can choose what they like or what they don't like! Or feed a crowd by creating a burrito bar! Use this recipe as a starting point, then make it your own by adding some creativity. These bowls are completely customizable!

The creamy avocado dressing is super easy to make, gluten and dairy-free and beyond delicious. Just throw all the ingredients in a food processor or blender! Add the jalapeno if you like some spice, but if not just leave it out.

  • Chicken

Or, keep it a plant-based bowl by sticking with beans or chickpeas.

Skip the store bought taco seasoning packets and flavor your protein choice with this delicious homemade taco seasoning blend made with just a few pantry staples.

LAYER!

Next, it's time to layer your bowl with all your favorite toppings. Using rice as a base, layer meat, black beans and veggies in a bowl then pour on the avocado lime dressing.

DO I HAVE TO USE RICE?

No! You can choose any sides you want! You can use quinoa, or keep this recipe grain-free by subbing regular rice for cauliflower rice. Or, just throw everything over a bowl of lettuce and call it a day!

Ingredients
  

In the Bowl
  • 1-2 cups Rice or Quinoa cooked according to package directions
  • 1 lb Ground Beef, Turkey or Chicken seasoned with Taco Seasoning & ¼ cup water
Creamy Avocado Dressing
  • 1 large Ripe Avocado
  • ¼ cup Oil I use avocado oil
  • 2 cloves Garlic
  • ½ teaspoon Salt or to taste
  • 1 Lime juiced
  • ⅓ cup Fresh Cilantro Leaves packed
  • ⅓ cup Water plus more for thinner consistancy
  • 1 Jalapeno, stems and seeds removed optional
Topping Ideas
  • Black Beans rinsed & drained
  • Bell Peppers diced
  • Tomatoes diced
  • Onion chopped
  • Lettuce shredded
  • Sweet Corn
  • Salsa

Equipment

  • Blender
  • Skillet

Method
 

  1. While rice is cooking, heat 1 tablespoon oil in a skillet. Cook & crumble meat. Drain fat if needed. Once cooked through, add taco seasoning plus ¼ cup water. Mix well and keep heat on low.
  2. Add all dressing ingredients to a food processor and blend until creamy. If you would like a thinner consistency, add more water 1 tablespoon at a time.
  3. Using the rice as a base, layer meat, black beans, and veggies in a bowl then top with the creamy avocado dressing.
