Gluten Free and Top 8 Allergy-Friendly Bagels

This breakfast recipe uses The Greater Knead bagels which are not only gluten free, but also top 8 allergen free! These gluten free bagels have a dense, NYC bagel texture, so they absorb just the right amount of liquid without getting soggy. This recipe uses the original flavor, but be sure to check out all of their amazing bagel flavors on their website!

Gluten Free Overnight Bagel Bake

Overnight casseroles are genius. Take a few minutes to prep the night before, and you'll be so happy in the morning when breakfast is ready to go! Just chop the bagels, and create a simple monkey mixture of banana, plant-based milk, flax seeds, sugar and spices.

My kids request this breakfast for every special occasion! It's such a simple recipe, but perfect to make-ahead for any holiday, birthday or brunch.

What ingredients do I need to make this easy Gluten Free Breakfast Casserole Recipe?

  • Four Greater Knead Bagels
  • Banana
  • Unsweetened Plant-Based Milk
  • Flax Meal
  • Brown Sugar
  • Cinnamon
  • Salt
  • Dairy-Free Chocolate Chips

Instructions on How to Make This Gluten Free Breakfast Recipe

Start by microwaving each bagel for 60 seconds to defrost. Slice each bagel vertically, then cut into chunks.

Grease a baking dish with coconut oil or vegan butter. Place the cut bagel chunks in the dish.

In a large bowl, mix together a mashed overripe banana, plant-based milk, cinnamon, salt, brown sugar and flax meal until well combined.

Pour the liquid over the bagels and stirring until all the bread is coated. Cover and refrigerate overnight.

The next morning, preheat the oven to 350. Uncover the casserole dish and sprinkle the top of the bagel mixture with chocolate chips. Bake for 35-40 minutes and let stand about 15 minutes before serving because it will be hot!

Sit back and enjoy because your entire family can eat confidently!

  • 4 The Greater Knead Bagels plain
  • 1 Banana overripe & mashed
  • 2 cups Unsweetened Plant-Based Milk
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Salt
  • ½ cup Brown Sugar
  • 2 tablespoon Ground Flax Meal
  • ½ cup Dairy-Free Chocolate Chips

Method

  4. Place the cut bagels on the bottom of the baking dish.
  5. In a large bowl, add mashed banana, cinnamon, salt brown sugar, and flax meal. Mix until well combined.
  6. Pour liquid over bagels, cover and refrigerate overnight.
  7. Preheat oven to 350°
  8. Uncover and sprinkle chocolate chips over the top of the bagel bake.
  9. Bake for about 30 minutes until set.
  10. Let stand for 15 minutes before serving.
