Apple Cinnamon Quick Bread Recipe

This is an easy gluten-free quick bread recipe that requires no yeast. It takes only a few minutes of hands on time to make the batter then the oven does the rest of the work!

Ingredients Needed to Make This Apple Cinnamon Bread Recipe

Batter Ingredients

This recipe is so easy and made with only simple ingredients you most likely already have on hand in your kitchen.

  • Gluten Free 1:1 Flour. You can you use your favorite, but I used King Arthur Measure for Measure Gluten-Free Flour.
  • Apples. I would use granny smith or honey crisp for this recipe because they are firm and tart, and hold their texture when baking. The recipe calls for 2 cups which will be about 2 apples, depending on size.
  • Eggs
  • Oil. I used avocado oil.
  • Water
  • Brown Sugar
  • Granulated Sugar
  • Salt
  • Baking Soda
  • Baking Powder
  • Cinnamon
  • Vanilla Extract

Glaze Ingredients

The glaze is optional, but recommended to turn this bread into the ultimate dessert! Just combine confectioner's sugar, cinnamon and a couple tablespoons of unsweetened plant-based milk to pour on top of the apple loaf when it's finished baking.

Instructions for the Cinnamon Apple Bread Prep!

There's no electric mixer needed for this recipe. You can easily stir the batter ingredients together with a spoon, pour in a loaf pan then bake!

  • In a large bowl, mix all of the batter ingredients together, then stir in the apples. You can stir with a spoon, you don't need to use an electric mixer!
  • Pour batter into a greased or parchment lined loaf pan and bake for 50-60 minutes.
  • Meanwhile mix together the frosting ingredients then set aside.
  • After the loaf is done baking, let cool for at least 10 minutes before frosting and slicing. Enjoy!

Baking Alternatives

  • Mini Loaves. Try this recipe in mini loaf pans. Perfect for kids or for gifting! You will need to shorten the baking time if using this method.
  • Make Muffins. Turn this recipe into a bite-sized treat by using muffin tins. Grease and fill each ⅔ full then bake for 12-15 minutes.

Ingredients
  

  • 2 cups Gluten-Free 1:1 Flour
  • 2 cups Apples Peeled and Diced
  • 2 Eggs
  • ½ cup Oil I used avocado
  • ⅓ cup Water
  • ½ cup Brown Sugar
  • ¼ cup Granulated Sugar
  • ½ tsp Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1.5 tsp Cinnamon
  • 1 tsp Vanilla Extract
Optional Glaze
  • 1 cup Confectioner's Sugar
  • ½ teaspoon Cinnamon
  • 1-2 tablespoon Milk or Unsweeneted Plant-Based Milk start with one, add more to desired thickness

  • 1 Loaf Pan
  • Apple Peeler

Method
 

  1. Preheat oven to 350°

          Hi Lisa, this recipe was made for fresh, uncooked apples. The apple pie filling will definitely have too much liquid but it might be a yummy topping!
