The Secret to Moist Banana Muffins

The key ingredient is definitely very ripe bananas.

The darker the peel, the sweeter and more flavorful the bananas become. Those brown, spotty bananas that nobody wants to eat are perfect for baking because they mash easily and add natural moisture.

Another tip is not to overmix the batter. Stir just until everything is combined. Overmixing can make gluten free baked goods dense instead of light and fluffy.

How to Make this Gluten Free Banana Muffins Recipe

Step 1: Prep the oven

Preheat your oven to 350°F and line a muffin tin with paper liners or lightly grease each cup.

Step 2: Mix the dry ingredients

In a large bowl, whisk together:

  • Gluten free flour
  • Baking soda
  • Salt

Step 3: Mix the wet ingredients

In another bowl, mash the bananas until smooth.

Whisk in:

  • Granulated sugar
  • Eggs
  • Oil
  • Vanilla

Step 4: Combine

Pour the wet ingredients into the dry ingredients.

Mix gently until no streaks of flour remain.

Store them in an airtight container at room temperature for up to 3 days.

For longer storage, refrigerate for up to one week.

They also freeze great! Wrap each muffin individually before freezing, then thaw at room temperature or microwave for about 30 seconds when you're ready to enjoy one.
