Gluten free desserts can sometimes be tricky, but this mug cake comes out perfect every single time. It's made with simple pantry ingredients and you don't need any special gluten free flours or complicated blends. One mug, one microwave, five minutes from start to finish.

Whether you need a late-night treat, a quick after-school snack for the kids, or a single serve dessert to sweeten up your gluten free lifestyle, this chocolate mug cake is fast, easy, gooey, and so satisfying!

Ingredients You'll Need

The ingredient list is super simple, and you probably already have everything on hand. It's also completely dairy free if you use a plant-based milk, which makes it a great allergy-friendly option.

  • Gluten free all-purpose flour. A 1:1 flour blend works best
  • Cocoa powder. For that rich fudgy flavor
  • Granulated Sugar
  • Baking powder. Helps the mug cake rise
  • Milk of choice. Regular or dairy-free; use chocolate milk for an extra fudgy batter!
  • Oil. Keeps it moist and tender
  • Vanilla extract. Always a must for flavor
  • Pinch of salt. Balances the sweetness
  • Optional add-ins: chocolate chips, mini marshmallows, or a scoop of peanut butter

This combination gives you a soft, fudgy cake that feels like it came straight from a bakery, but you made it in a microwave!

How to Make a Gluten Free Chocolate Mug Cake

Making a mug cake is incredibly simple, but there is one important rule. Be sure to mix everything really well so there are no dry pockets of flour.

Start by adding the dry ingredients. Flour, cocoa powder, sugar, baking powder, and salt to your mug. Give it a quick whisk with a fork, then add the milk, oil, and vanilla. Stir until smooth and creamy. At this point, you can stir in chocolate chips, mini marshmallows or add a spoonful of peanut butter for an extra gooey center.

Microwave for 60 seconds depending on your microwave's power. Start with 60 seconds and check the texture. If it's still wet on top, add another 10 seconds. The cake will be soft and slightly gooey.

Top with whipped cream, chocolate syrup, crushed candy canes or fresh berries. Grab your spoon and dig in while it's warm!

  • 2 tablespoon Sugar
  • 2 tablespoon Cocoa Powder Unnsweetened
  • ¼ teaspoon Baking Powder
  • Pinch Salt

  • ¼ teaspoon Vanilla Extract
  • ⅓ cup Milk Regular or dairy free; use chocolate milk for an extra fudgy batter!
Optional
  • 1 tablespoon Chocolate Chips, Mini Marshmallows or Peanut Butter

Method
 

  1. To your favorite mug, add all dry ingredients to a microwave-safe mug and mix well.
  2. Add milk, oil, and vanilla. Stir until smooth batter forms.
  3. Stir in chocolate chips, mini marshmallows or peanut butter if using.
  4. Microwave for 60 seconds, checking after 60 seconds.Add 10 seconds more if needed.
  5. Let cool slightly, then enjoy warm. Feel free to to top with chocolate syrup, marshmallows, and/or crushed candy canes.
