This Easy BBQ Meatloaf recipe is loaded with smokey flavor and very simple to make! It's both gluten free and grain free, seasoned to perfection, then topped with the sweet and tangy flavors of BBQ sauce. Your family will love this adaptation on a classic American meal.

Traditional meatloaf recipes often use breadcrumbs or oats to hold everything together. This version is just like mom used to make only adapted to be both gluten free and grain free. It swaps those ingredients out for almond flour, which adds a subtle nutty flavor while keeping the loaf tender and moist.

Make sure your BBQ sauce is labeled gluten free! Many store-bought versions contain soy sauce or malt vinegar, which can sneak in gluten. I stick to our favorite Stubb's barbeque sauce, which is certified gluten free and made with better for you ingredients.

What ingredients do I need to make this easy meatloaf recipe?

  • 2lbs Lean Ground Beef
  • Eggs
  • Almond Flour: Finely ground. We get our almond flour from Costco- it's the best bang for your buck!
  • Spices: Garlic Powder, Onion Powder, Paprika, Salt and Pepper
  • BBQ Sauce goes inside and on top!

Making this Homemade Gluten Free Meatloaf is SO easy!

Place ground beef in a large bowl then add your seasonings and barbeque sauce. Mix well with your hands but do not overmix.

Add an egg and almond flour to help bind the meat, then shape into a loaf. Spread BBQ sauce across the entire loaf, then bake to perfection! Brush with extra BBQ sauce before serving for a sticky, caramelized finish.

Serve this meatloaf with a side of mashed potatoes or classic cornbread. And don't forget some steamed or roasted veggies for a complete gluten free comfort meal.

Storage & Reheating

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat slices in the oven at 350°F for 10 minutes or in the microwave for 45 seconds. It also freezes beautifully. Wrap slices individually and store for up to 3 months.

Ingredients
  

  • 2 lbs Ground Beef lean
  • ½ cup Almond Flour finely ground
  • 2 Eggs
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder or dried minced onions
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • ½ cup Barbeque Sauce Plus more for topping

Method
 

  1. Preheat oven to 375°.
  2. In a large mixing bowl, add ground beef, almond flour, eggs & seasonings. Mix well.
  3. Shape into a loaf in a shallow baking pan. I use an 8x8 baking dish. Then spread BBQ sauce on top.
  4. Bake about 50 minutes until cooked through. Let rest 5-10 minutes before serving.

Notes

For a fun kid-friendly option, I sometimes separate the meat mixture into smaller portions and cook in a muffin pan.
